有些常客可能會覺得瑪麗亞·拉米雷斯這個名字很熟悉，因為這是我們第六年向這位瓜地馬拉生產者購買咖啡。瑪麗亞的農場 T'Zun-Witz 位於瓜地馬拉韋韋特南戈地區的康塞普西翁·維斯塔鎮。韋韋特南戈是一個文化極度多元的地區，超過 75% 的居民是數個在此居住數百年的原住民社群成員。
瑪麗亞本人是哈卡爾特克人的一員，他們的母語波普蒂語僅有六萬人使用。瑪麗亞和她的家人是第一代咖啡生產者。她的丈夫為了買下農場而移民到美國。瑪麗亞是「埃爾·森德羅合作社」的成員，該合作社為康塞普西翁·維斯塔鎮的咖啡生產者提供支援與教育，主要教育重點在於改善農業實務與採後處理流程。
在收成期間，瑪麗亞確保只採摘最成熟的咖啡櫻桃，其餘的則留在樹上，改天再採。咖啡櫻桃在採摘當天即進行去果皮處理，並在水中發酵 36 小時。發酵完成後，咖啡豆會用清水洗淨，然後在陽光下的庭院中晾曬六天。
The farm’s name, T’Zun-Witz, caught my eye first, and the beans themselves are just as memorable—rich and smooth with a finish that lingers. I’ve gone through two bags already, and each cup tastes like a little trip to Guatemala.
Six years of buying from the same Guatemalan producer really shows—this batch has that deep, consistent roast I’ve come to expect from Maria’s T’Zun-Witz farm. Sad it’s sold out, because I’d have grabbed another bag in a heartbeat.
The name on the bag caught my eye since I've read about this farm before, and the beans roasted to a deep, even color that made my morning pour-over smell like toasted cocoa. It's a small batch so I'm savoring every cup.
