Hervey y Rocio Cuellar han sido productores de café toda su vida. Comenzaron su carrera en el mercado comercial con una parcela de Catimor. A principios de sus 30 años, Hervey tomó la decisión de entrar en el mercado de especialidad y establecer conexiones más fuertes y directas con sus clientes. Lanzándose de lleno, Hervey compró gesha e incluso convenció a su hermano para que hiciera lo mismo. Sin embargo, no fue un camino fácil. Las primeras cosechas carecían de la complejidad por la que se conoce al gesha. Hervey comenzó a probar diferentes técnicas de procesamiento postcosecha. Después de experimentar con unos 30 métodos diferentes, finalmente llegó a los resultados que se pueden degustar ahora. Esto se logró mediante una fermentación anaeróbica de 50 horas de las cerezas, seguida de una fermentación anaeróbica de 60 horas de los granos despulpados. Luego, el café se lava y se seca en camas elevadas bajo sombra.
