Brothers Kevin & Kenny Soewondo begonnen hun koffiecarrière met het openen van een café in Surabaya, de grootste stad in Oost-Java. Naarmate ze groeiden, startten ze een branderij.

Dit wekte hun interesse in koffieverwerking en het duurde niet lang voordat ze oude rijstverwerkings- en droogstations huurden om hun eigen groene koffie te verwerken.

Ze kopen kersen van boeren die rond de Ijen-vulkaan wonen en werken. De meeste boeren hier zijn Madurezen; hun grootouders kwamen van het eiland Madura.
 
De kersen worden, na sortering via een optische sorter, onderworpen aan een 2-daagse anaerobe fermentatie. De kersen worden gedroogd, ontpeld en daarna opnieuw gesorteerd.
