Em Llano de Agua, Santa María la Asunção, uma pequena cidade no norte de Oaxaca, México, mais conhecida por cogumelos psicadélicos do que por café, vive Maricela Esperón. Embora o seu avô também fosse cafeicultor, a jornada de Maricela na agricultura não foi fácil. Quando chegou a altura de ele se reformar, o pai de Maricela, Miguel, deveria ter sido o herdeiro. Mas como na altura Miguel só tinha filhas, o seu pai quebrou a tradição e deu o seu terreno ao irmão. Miguel partiu então para a Cidade do México, regressando depois de poupar o suficiente para comprar um terreno próprio, que Maricela assumiu quando o seu pai adoeceu.

Agora a gerir tudo sozinha, Maricela enfrenta desafios com a humidade de Mazateca, o que significa que o café lavado é a norma para evitar que as cerejas criem bolor. Mas Maricela, novamente a quebrar a tradição, produz cafés naturais. Para conseguir isto, segue uma rotina intensiva: secar as cerejas no telhado da sua casa, a única área suficientemente plana. Depois, ensaca-as ao final da tarde, guardando-as no rés-do-chão durante a noite, e volta a colocá-las todas no telhado todas as manhãs. Cada lote demora 30 dias a secar.
