Hervey e Rocio Cuellar sono produttori di caffè da tutta una vita. Hanno iniziato la loro carriera nel mercato commerciale con un appezzamento di Catimor. Intorno ai trent'anni, Hervey ha deciso di entrare nel mercato specialty e di instaurare connessioni più forti e dirette con i suoi clienti. Buttandosi a capofitto, Hervey ha acquistato del gesha e ha persino convinto suo fratello a seguirlo. Non è stato un percorso privo di ostacoli, però. Le prime colture mancavano della complessità per cui il gesha è noto. Hervey ha iniziato a sperimentare diverse tecniche di lavorazione post-raccolta. Dopo aver provato circa 30 metodi diversi, ha finalmente ottenuto i risultati che puoi assaporare oggi. Questo è stato raggiunto con una fermentazione anaerobica di 50 ore delle ciliegie, seguita da una fermentazione anaerobica di 60 ore dei chicchi spolpati. Il caffè viene poi lavato e asciugato su letti rialzati coperti all'ombra.
