Hervey et Rocio Cuellar sont producteurs de café depuis toujours. Ils ont débuté leur carrière sur le marché commercial avec une parcelle de Catimor. Au début de la trentaine, Hervey a pris la décision de se lancer dans le marché de spécialité et de nouer des liens plus forts et plus directs avec ses clients. Plongeant directement dans le grand bain, Hervey a acheté du gesha, et a même convaincu son frère de faire de même. Le parcours n'a pourtant pas été sans embûches. Les premières récoltes manquaient de la complexité pour laquelle le gesha est réputé. Hervey a alors commencé à expérimenter différentes techniques de traitement post-récolte. Après avoir essayé environ 30 méthodes différentes, il est enfin parvenu aux résultats que vous pouvez déguster aujourd'hui. Ce résultat a été obtenu par une fermentation anaérobie de 50 heures des cerises, suivie d'une fermentation anaérobie de 60 heures des grains dépulpés. Le café est ensuite lavé et séché sur des lits de séchage surélevés à l'ombre.
